It's tough to not like this episode. The prisoner, though he's a huge A-hole, is clever and even fools Raylan. The situation got tense and Raylan, being so astute, found a way in with the fried chicken - hey! What a creative way to bring that back!
That moment was another one of those Justified moments when the characters are talking about something but its laden with so much subtext that they're clearly talking about something else. In this case, they were talking about the things the love; the things that make them want to keep on living. The prisoner may not be the foodie that Raylan is, but their common ground paved the way for Raylan's later revelation that the prisoner doesn't want to admit he's scared of dying.
